Dallas Cowboys Family Cookbook

From an impressive Flan recipe by Miles Austin to a delicious Sweet and Sour Meat Loaf by Michelle and Jason Witten, the recipes are sure to please!


This very special cookbook has been published annually, as a fundraiser for The Dallas Cowboys Courage House at Happy Hill Farm Academy in Granbury, Texas. Happy Hill is home to underprivileged, deserving kids. Over 100 boys and girls, that have the potential, drive and desire to become all they can and make the most of their lives reside on the working 500-acre farm. Founded on faith and driven by excellence in academics, Happy Hill Farm Academy and The Dallas Cowboys are making a difference in the lives of these children.

Miles Austin’s Flan

  • 1/2 cup sugar
  • 3 egg yolks
  • 1 2/3 cups condensed milk
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1 cup slivered almonds, coarsely chopped
  • 3 eggs

Sprinkle sugar evenly in a 9" cake pan; place over medium heat. Using oven mitts, caramelize sugar by shaking pan occasionally, until sugar is melted and a light golden brown. Cool (mixture may crack slightly as it cools). Combine condensed milk, 3 eggs, 3 egg yolks, vanilla, and almonds in a blender. Blend on high for 15 seconds. Pour over caramelized sugar. Cover pan with foil; place in a larger pan. Pour about 1 inch of water in a large pan. Bake at 350 degrees for 55 minutes, or until knife inserted near center comes out clean. Remove pan from water, and uncover; let cool on wire rack for at least 30 minutes. Loosen edges with a spatula. Place over serving plate upside down on top of cake pan. Quickly invert flan onto serving plate. Makes 6 to 8 servings.


Michelle and Jason Witten’s Sweet and Sour Meat Loaf

  • 1 egg
  • 1/2 teaspoon pepper
  • 5 tablespoons ketchup, divided
  • 1 lb ground beef
  • 2 tablespoons mustard
  • 1/4 cup sugar
  • 1/2 cup dry bread crumbs
  • 2 tablespoons brown sugar
  • 2 tablespoons onion soup
  • 2 tablespoons cider vinegar
  • 1/4 teaspoon salt

In a bowl, lightly beat the egg. Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt and pepper. Crumble beef over mixture; mix well. Shape into an oval loaf. Place in a loaf pan or baking dish. In a small bowl, combine sugars, vinegar, and remaining ketchup. Spoon over meat loaf, covering over top and sides. Bake at 350 degrees for 50- 60 minutes. Baste with sauce in loaf pan while baking.
